Sample Approved Recipe:
Dressing: (combine and chill till served)
2 T. Fresh Orange Juice 2 T. Fresh Lemon Juice 1-2 pkts of Splenda or other sugar substitute
Salad:
1/4 Lite Soy Sauce or Braggs Amino Acids 2 T fresh Orange Juice 1 Clove Garlic or Garlic Powder 2 Green Onions or Onion Powder 1/2 lb Boneless Skinless Chicken Breast 4 c. Raw Spinach - washed 1 c. Sliced Strawberries 1/4 med diced Red Onion (optional)
In a large ziplock, combine soy sauce, green onions, orange juice and garlic. Add chicken and marinate for 2-24hrs. Remove chicken and reserve marinade. Grill or broil chicken for 8-10 min turning once and brushing with marinade. Cook until chicken is tender and no longer pink.
Place Spinach, 2 cubs each onto plate. Slice chicken and place on top of spinach. Top with sliced strawberries and red onion (optional). Drizzle with dressing prepared earlier.
